Serves 2 as a main or 4 as a side

INGREDIENTS:

  • 2 cups seedless cucumber, cubed
  • ¼ cup *finely chopped red onion
  • ¼ cup sliced green onion
  • 1 large, *firm avocado, pitted and diced
  • 2 tablespoons Veganaise
  • 2 tablespoons lemon or lime juice (I prefer lime)
  • ½ teaspoon salt
  • 1 – 2 dashes hot sauce (or, to taste)
  • Flat-leaf parsley to garnish

DIRECTIONS:

Whisk together Veganaise, lemon/lime juice and seasonings; stir well, and set aside.   Combine cucumber, onions and avocado in a bowl and add dressing, mixing very lightly, but well.  Garnish salad with parsley.

I add a dash of cayenne pepper!  It gives the salad a real “zip!”
