Serves 2 as a main or 4 as a side
INGREDIENTS:
- 2 cups seedless cucumber, cubed
- ¼ cup *finely chopped red onion
- ¼ cup sliced green onion
- 1 large, *firm avocado, pitted and diced
- 2 tablespoons Veganaise
- 2 tablespoons lemon or lime juice (I prefer lime)
- ½ teaspoon salt
- 1 – 2 dashes hot sauce (or, to taste)
- Flat-leaf parsley to garnish
DIRECTIONS:
Whisk together Veganaise, lemon/lime juice and seasonings; stir well, and set aside. Combine cucumber, onions and avocado in a bowl and add dressing, mixing very lightly, but well. Garnish salad with parsley.
I add a dash of cayenne pepper! It gives the salad a real “zip!”
