INGREDIENTS

  • 2 cups of brown rice or quinoa cooked according to Pkg directions
  • 1 cup toasted walnuts, cashews, almonds, or macadamia nuts
  • 2 cup toasted sunflower or pumpkin seeds
  • 1 sweet onion, chopped
  • 4 organic carrots, chopped
  • 3⁄4 cup organic broccoli or zucchini, chopped
  • 1 cup organic butternut squash, cubed
  • 2 tablespoon extra-virgin olive oil
  • 1 – 2 dashes hot pepper sauce (optional)
  • 1 teaspoon salt

DIRECTIONS:

Prepare in batches:

  • Cook the brown rice or quinoa as directed on package and set aside.
  • Next, Steam the carrots, broccoli, and butternut squash in a large steamer over medium simmering water for 5 minutes, covered. Drain and let cool for 10 – 15 minutes.
  • Grind the toasted nuts and toasted seeds to a fine meal in a food processor, then place in large bowl.
  • Process the onion and steamed veggies until well combined, then add to bowl with nut/seed mixture.
  • Process the cooked rice and olive oil in the food processor, and pulse until smooth, and then transfer to the bowl.
  • Add a dash or two of the Hot Pepper Sauce and the salt and mix all ingredients together until well-combined (by hand, using a large wooden spoon).
  • Form mixture into patties & sprinkle with salt & pepper, if desired.
  • Grill the patties 6 to 8 minutes on each side, until nicely browned*
