INGREDIENTS
- 2 cups of brown rice or quinoa cooked according to Pkg directions
- 1 cup toasted walnuts, cashews, almonds, or macadamia nuts
- 2 cup toasted sunflower or pumpkin seeds
- 1 sweet onion, chopped
- 4 organic carrots, chopped
- 3⁄4 cup organic broccoli or zucchini, chopped
- 1 cup organic butternut squash, cubed
- 2 tablespoon extra-virgin olive oil
- 1 – 2 dashes hot pepper sauce (optional)
- 1 teaspoon salt
DIRECTIONS:
Prepare in batches:
- Cook the brown rice or quinoa as directed on package and set aside.
- Next, Steam the carrots, broccoli, and butternut squash in a large steamer over medium simmering water for 5 minutes, covered. Drain and let cool for 10 – 15 minutes.
- Grind the toasted nuts and toasted seeds to a fine meal in a food processor, then place in large bowl.
- Process the onion and steamed veggies until well combined, then add to bowl with nut/seed mixture.
- Process the cooked rice and olive oil in the food processor, and pulse until smooth, and then transfer to the bowl.
- Add a dash or two of the Hot Pepper Sauce and the salt and mix all ingredients together until well-combined (by hand, using a large wooden spoon).
- Form mixture into patties & sprinkle with salt & pepper, if desired.
- Grill the patties 6 to 8 minutes on each side, until nicely browned*
