SALAD INGREDIENTS:
- 1⁄2 cup finely chopped or grated carrot
- 1⁄2 cup finely chopped tomato (preferably grape tomatoes)
- 1⁄2 finely chopped orange pepper
- 1⁄2 cup finely chopped yellow pepper
- 1⁄2 cup finely chopped red pepper
- 1⁄2 cup finely chopped green pepper
- 1⁄4 cup finely sliced green onions
- 1⁄2 cup finely chopped red onion
- 1 cup finely chopped English cucumber
- 1 – 1 1⁄2 cup cooked (Trader Joe’s) Harvest Grain Blend or Israeli Couscous
- 1 cup shelled edamame (frozen-thawed)
- (Optional) 1⁄2 cup fined chopped zucchini or yellow squash
DIRECTIONS:
Cook grains according to package directions and cool thoroughly. Prepared all vegetables and mix together in large bowl, add 1 cooled grains. Last, add prepared dressing, and salt/pepper to taste, and chill in refrigerator 1 hour before serving.
Please note: The secret to this delicious salad is the dressing; the flavor of the dressing is what “makes” the salad. Therefore, you can use any combination of fresh raw veggies. However, I suggest using seasonal veggies for BEST nutrition.
DRESSING:
- 1 cup Veganaise (Vegan mayonnaise)
- 3⁄4 cup Medium (hot) Salsa, preferably Trader Joes Red Salsa
- 3⁄4 Tsp salt
- 1⁄4 Tsp red – cayenne pepper
**Prepare Special Dressing 1 hour before mixing to enhance flavor. **
Directions: Mix all ingredients in a covered jar and shake well to blend. Pour desired amount over chopped salad and mix.
