INGREDIENTS:
- 1 cup cooked quinoa
- 2 – 3 tablespoons black beans (organic, canned, drained)
- 1 cup extra-firm tofu, cubed
- ½ cup Edamame, shelled, thawed if frozen
- 1 cup chopped fresh tomato
- ½ cup chopped peppers, mixed (red, orange, & green)
- ¼ cup shredded carrot
- ¾ cup diced avocado
- ½ teaspoon salt
- Dash or two of smoked paprika (optional)
- Dash hot pepper sauce
- 2 tablespoons fresh lime juice
- Toasted sesame or sunflower seeds
INSTRUCTIONS:
In a large ceramic bowl, mix together well the first nine ingredients. Add Lime juice and hot pepper sauce, and toss lightly – but well. Cover and place in refrigerator for an hour before serving. Just before serving, top off salad with the toasted seeds.
