INGREDIENTS:

  • 1 cup cooked quinoa
  • 2 – 3 tablespoons black beans (organic, canned, drained)
  • 1 cup extra-firm tofu, cubed
  • ½ cup Edamame, shelled, thawed if frozen
  • 1 cup chopped fresh tomato
  • ½ cup chopped peppers, mixed (red, orange, & green)
  • ¼ cup shredded carrot
  • ¾ cup diced avocado
  • ½ teaspoon salt
  • Dash or two of smoked paprika (optional)
  • Dash hot pepper sauce
  • 2 tablespoons fresh lime juice
  • Toasted sesame or sunflower seeds

INSTRUCTIONS:

In a large ceramic bowl, mix together well the first nine ingredients. Add Lime juice and hot pepper sauce, and toss lightly – but well. Cover and place in refrigerator for an hour before serving. Just before serving, top off salad with the toasted seeds.
