If you’re in the mood for a healthy chocolate treat on a cold night, try this pudding! For an extra special dessert, top the pudding with some whipped coconut cream.
INGREDIENTS:
- 10 Medjool Dates, pitted and coarsely chopped
- 1 small ripe, firm, unbruised Banana
- 2 ripe Avocados (pitted)
- 3⁄4 cup unsweetened Almond or Coconut Milk (Califia)
- 3⁄4 cup Raw Cacao* Powder
- 3 tablespoons Grade B Maple Syrup* or Raw Blue Agave Nectar
- 1⁄2 teaspoon ground Cinnamon
- Pinch or so of Cayenne pepper
- 1 teaspoon Coconut oil, Walnuts, or Almonds
- 1 – 2 teaspoons Vanilla extract
- Pinch of Sea Salt, plus more for garnish
DIRECTIONS:
Soak dates in 1 cup hot water until soft, 5 to 10 minutes. Drain, and set aside. In a high-speed blender, process the dates, avocados, almond milk, cocoa, maple syrup (or agave), oil, vanilla, cayenne, cinnamon, and pinch of salt until smooth and creamy. Pour into individual dessert glasses and refrigerate until cold, about 3 hours. Serve garnished with a little extra sea salt (if desired), chopped toasted nuts, e.g. walnuts, pecans, fresh whipped cashew cream, or fresh raspberries.
